Here is a heart healthy yet tasty recipe. I adore the combination of creamy olive oil, tangy lemon, savoury nutritional yeast and zing of basil. For pesto I highly recommend the lemon, garlic and basil are all fresh. Now that I think of it, this recipe is perfect for the freezer to have on hand for a quick dinner.
This almond pesto is a satiating pasta sauce filled with heart healthy fat and protein to help make your vegan pasta dish perfectly balanced. I served mine with zucchini noodles but feel free to use whatever noodles you like. The recipe is below.
2 Cups basil
1/2 Cup raw almonds
1/4 Cup nutritional yeast
1/2 Tsp salt
2 Cloves garlic
1/4 Tsp black pepper
Juice of 1/2 lemon
3/4 Cup olive oil
Blend all the ingredients in a high speed blender until smooth.
