Vegan Frittata Muffins
Ingredients:
2 cups Cashew Flour
2 tbsp Nutritional Yeast
1 tsp each Curry, Turmeric, Cumin, Coriander, Ginger
1/2 tsp baking soda
1 tsp baking powder
1 tsp salt
1 cup Red Peppers
1 cup Spinach
1/2 cup Cilantro
1 Jalapeño
1 tbsp oil
2 cups Water
2 tbsp Lemon Juice
* you can add 3/4 cups of vegan tofu feta if you want
Mix up all the ingredients and bake in the oven at 374F/190C for 30-35 min. Enjoy! 💖🤗
