This cheesecake recipe is surprisingly simple and as easy as making cookies! It has few ingredients and doesn’t require a water bath. I made it in a heart-shaped tin and it serves 2 people (or one)!
First, I made the crust by combining 1 tbsp melted butter with 1/3 cup crushed Rice Krispies. I would recommend crushed graham crackers or cookies, but I didn’t have any on hand at the time. Press the crumb mixture into the bottom of a small lined tin. To create the filling, whip 4 oz room-temp cream cheese with 3 tbsp sugar, a splash of lemon juice and vanilla, a pinch of salt, and half an egg. Pour the mixture on top of the crust in the tin. Bake at 325 (I accidentally did 350 but it’s no big deal) for 15-22 minutes, until it is slightly browned at the top and still a bit wobbly. Turn off the oven and let it cool inside so it doesn’t deflate right away. Chill for a few hours (I did overnight) and then serve!
