Here’s a fun yummy way to elevate your toast for breakfast! This plant based carrot “lox” is smoky and flavorful and so delicious on cashew cream cheese toast! I loveeeee toast for breakfast and this is a fun way to switch it up! For ingredients for the smoky carrot lox you will need:
🥕 4 carrots peeled into strips
🥕 1 tbsp soy sauce
🥕 1/4 tsp liquid smoke
🥕 3 tsp agave or other sweetener
🥕 1/4 tsp kelp powder
🥕 1 tsp apple cider vinegar
🥕 1 tbsp neutral tasting oil
🥕 pinch of salt
Mix all the ingredients together and pour over your carrot strips. Bake for 40 mins at 350, flip halfway through, I covered for the second half of baking.
