Valentine’s Day is coming up, and I wanted to create a fun and easy cookie recipe to celebrate! I’ve always loved red velvet cake, so I tried to turn it into a cookie!
First, whisk together 94 grams of flour, 3 grams of cocoa powder, 1/4 tsp baking soda, and a large pinch of salt. Put that aside, and cream together 1/4 cup unsalted butter, 1/4 cup granulated sugar, and 2 tbsp brown sugar. Mix in 1/2 egg, 1/2 tsp vinegar or lemon juice, a splash of vanilla extract, and red food coloring. Add the dry ingredients and mix until fully combined. Chill the cookie dough for 1-2 hours and form into evenly shaped balls. Bake at 350 degrees F for 10-12 minutes, and cool before topping with cream cheese frosting.
