1 lb Sea bass, cod, or sablefish
2 tbsp White miso
2 tbsp Sake + a few more for cleaning the fish
2 tbsp Mirin
Pour a few tbsp of Sake on the fish first to clean it. Wipe off with a paper towel.
To prep the marinade mix together 2 tbsps each of miso, mirin, and sake.
Cover the fish with the marinade and let it sit for at least 30 mins but I recommend overnight.
To cook, place the fish under the broiler for 6-8 mins or until nicely caramelized.
