I must confess I am mushroom obsessed and with that being said one of my favorite ways to use mushrooms is as a meat replacement because of its texture. It absorbs the flavors it is cooked with so well making it taste divine. Oyster, shiitake, portobello and white button mushrooms are the types I tend to buy.
Here is a little tip I will share with you. When cooking with mushrooms if you want the mushrooms to be less mushy then simply add salt to draw out the moisture of the mushrooms. They are like a sponge and will absorb whatever liquid they are cooked with.
If you use them to make a vegan recipe like this one remember to also add some additional protein to make the dish perfectly balanced.
Shiitake Mushroom Meat Recipe:
8 shiitake mushrooms (1 Cup)
3 tbsps olive oil
I used the following seasonings for tacos but you can adjust accordingly: 1 tsp fajita seasoning, dash black pepper, dash cayenne pepper and 1 Tsp adobo seasoning
3/4 Cup vegetable broth
1/2 Tsp liquid smoke
Step 1: Slice the mushrooms into skinny pieces about 1/4” in wide, then add to a bowl with all of the ingredients except the broth and liquid smoke.
Step 2: Add the mushrooms, broth and liquid smoke to a pan and cook until tender on medium/low heat. This could take 10-15 minutes.
Step 3: Use in a taco recipe or stir-fry or whatever recipe you like.
