This recipe is so delicious and low carb which is amazing! It’s a cauliflower chicken and shrimp fried rice. The ingredients you need are chicken, eggs, cauliflower rice, olive oil, garlic, your choice of veggies, your choice of sauce to marinade the chicken and fried rice seasoning mix.
Step 1: Marinade your chicken. I used Organic Asian Fusion Low Sodium Teriyaki Sauce and some Stir Fry Sauce which I both bought from Vons.
Step 2: While your chicken is cooking, add olive oil to a pan and start cooking your shrimp.
Step 3: While your shrimp and chicken are cooking, cook some scrambled eggs. Do how ever many you want depending on the serving size that you’re making. I did 2 eggs! This part is also optional, but I like scrambled eggs in my fried rice.
Step 4: Your chicken should be done, so cut it up in small pieces.
Step 5: Next, cook your cauliflower rice and veggies in different pans. For veggies, I used broccoli and bell peppers and I cooked them with garlic and olive oil.
Step 6: Everything should be almost ready so add all of your ingredients to a large pan or pot and mix it all together.
