Just tried a new recipe inspired by Whole30 and it was 💣💣💣💣💣💣.
Here are the steps for Stuffed Sweet Potatoes 🍠:
1️⃣ Poke holes in 4-5 sweet potatoes and bake at 425 degrees for 45 minutes or until soft.
2️⃣ Sauté diced onion, then add 1lb ground meat (I made 2 separate pans- ground beef and ground turkey) until cooked through.
3️⃣ Drain. Add garlic (I don’t measure, just pile it on 😅) and cook for 1 minute.
4️⃣ Add enchilada sauce (I used La Victoria canned sauce) and simmer for 10 minutes.
5️⃣ Cut open cooked sweet potato, add meat sauce, and top with whatever you want! I used avocado, tomatoes and Greek yogurt (awesome sub for sour cream and extra protein!).
🌶 @whole30’s recipe used tomato sauce and spices like chili powder and cumin but I had a can of enchilada sauce in our cupboard already so I gave that a go.
😋 So flavorful and so easy. And I used the leftover meat sauce to make enchiladas for the whole family....bc getting the kiddos to eat sweet potatoes would’ve been a gamble. 🎰
