Here’s my recipe for healthy chickpea blondies! I don’t bake very often but when I do I try to make my desserts as healthy as possible! I love date sweetened desserts because the fiber in the dates slows down the absorption of the sugar.
Ingredients:
1 heaping cup rolled oats
1 tsp baking soda
1 tsp baking powder
12- 14 pitted dates + 1/4 cup water microwaved for 30 secs to soften
1 can low sodium chickpeas drained and rinsed
1/2 cup almond butter
1 tsp vanilla
2 tbsp ground flax
1 Applesauce package
Lakanto chocolate chips
Blend the oats into flour using a food processor. Then add in the baking soda and baking powder and pulse a few times to combine. Set these dry ingredients aside.
Microwave 12 pitted dates with 1/4 cup water to soften them. Add those to the food processor with chickpeas, almond butter, vanilla, flax seeds, applesauce and process until smooth. In a separate bowl mix together the dry ingredients and the wet and stir in sugar free/ vegan chocolate chips. Transfer to a 8x8 baking dish lined with parchment paper. Bake at 350 for 30 mins.
