Decided to create a dinner with my leftover produce from the farmers market. The fresh dill is really what transformed this into something phenomenal. The combination of dill and potatoes is life changing! If you have never cooked with fresh herbs then I highly recommend it because fresh herbs will completely transform the flavour of your dishes!
Millet, quinoa, buckwheat and other similar ancient grains are high in vitamins and minerals so I tried to include them in my diet often. Cashew Parmesan is something I try to have on hand as a staple in my cabinet.
