This is one of my favorite go-to recipes. All you need is a few different veggies of your choice, salt, pepper, olive oil, and, in my case, fried garlic chips~~
Dice up all of your veggies and arrange them in a glass pan. Make sure everything is spread out enough so it can cook evenly.
Roast at 400 degrees for about 30 minutes or until toasted :)
I like to layer everything on top of a bed of rice, and add a sliced tomato and some seasoned chickpeas for extra protein. Finally, I top my bowl off with some nutritional yeast and a few extra garlic flakes~
