Blue agave comes from blue weber agave plants and its full name is agave tequilana weber variety azul. It is named after the botanist Frederic Albert Constantin Weber. It is an all-natural low glycemic sweetener. It is 1.4x sweeter than honey! A little of it goes a long way. It is a very common sweetener used in the U.S.

I use blue agave as my syrup and sugar replacement! Blue agave tastes sweet and is a light, watery consistency. It is the perfect replacement for regular pancake syrup which is filled with high fructose corn syrup, artificial flavors, and way too many ingredients.
I like blue agave because it is just one ingredient and it is alkaline. Alkaline foods are important because anything that is acidic will cause the body to become acidic. An acidic environment is prone to sickness and disease!
