BEST HEALTHY MEAL | Juicy Chicken With a Side Of Rice & Veggies

🧑🍳I am a chef and a foodie. Preparing food is not only my job but my passion as well. Eating healthy, delicious foods that are quick and easy to prepare, even on hectic weeknights, is a choice I make every time I step into my kitchen.
Today I would love to share with you one of my favorite healthy lunch/dinner ideas that takes only 20 min to prepare…
🍛It is juicy chicken breast with a side of veggies and brown rice topped with a sunny-side-up egg.
What you will need:
🐔1 boneless, skinless chicken breast
🫒1 tbsp olive oil
🧂Pinch of salt and pepper (instead of salt I like using Vegeta) Amazon.com : Podravka Vegeta Gourmet Seasoning And Soup Mix, 1 kg Bag : Greek Seasoning : Grocery & Gourmet Food
🍚1 cup of brown rice (prepared according to the directions on the box) Amazon.com : Minute Brown Rice, Instant Brown Rice for Quick Meals, 28-Ounce Box : Rice Bowls : Everything Else
🥗1 bag of frozen veggies (Mine are by Birds Eye Steamfresh Broccoli, Cauliflower & Carrots, but you can pick whichever one you love) Birds Eye Steamfresh Frozen Vegetables - 10.8oz : Target
🧑🍳Boneless, skinless chicken breasts have less fat than other cuts of meat so they often get dry. To avoid dry and overcooked chicken, I file the chicken breast making it thiner. Tenderizing chicken with a meat tenderizer is an easy way to insure the surface of the chicken breast is flat so the chicken cooks more evenly.
🧂The next step is lightly seasoning the meat on both sides with some Vegeta and ground black pepper.
⏸Let’s pause for a moment and talk about Vegeta by Podravka. It is an all purpose seasoning that is especially good on chicken. It is made with unique blend of spices and dehydrated vegetables without any artificial flavors or preservatives. I love it because it highlights the flavor of the meat without being overpowering.
🫒Heat up 1 tbsp of olive oil and cook chicken 3-5 minutes per side or until golden brown. This is the way to prepare juicy and delicious chicken breast
🥗On the side I prepare veggies which I place in the microwave for 4-5 minutes.
🍚Brown rice is also very quick and simple to make. I put 1 cup of rice with 1 cup of water in the microwave safe dish, cover and cook for 7 minutes.
🍳I like to add sunny-side-up egg on top of my rice. The way I prepare it is simple. I heat up the skillet with some cooking spray and crack an egg. I immediately add few tbsp of water and cover the skillet. After 3 minutes I get perfectly cooked sunny-side-up egg that is runny in the center.
This quick and easy meal is not only healthy but delicious too. It has over 55g of protein, whole grains, 2 serving of veggies and very little salt and fat.
