Here’s a vegan recipe for you to try today (it’s also keto friendly and it takes 10 minutes to prepare):
🥑 Zucchini Noodles with Avocado Sauce 🥑
- Cut the zucchini into noodles and stir fry them for a couple of minutes.
- For the creamy avocado sauce you’ll need to blend together: avocado, pine nuts (or walnuts/cashews), basil (or spinach), lemon juice and some water.
- Once you’ve made the noodles and blended all the sauce ingredients in a blender, you just need to combine both and add some cherry tomatoes on top.
You can also add nutritional yeast and other spices or herbs for more flavor.
